How to Make Gnocchi

Gnocchi (pronounced nyoh-kee) is Italian for dumplings. Traditionally it is made from potatoes and flour. Eggs or cheese are often added. The gnocchi is shaped into balls, cooked in boiling water, and served with butter, Parmesan, or any number of sauces. The dough can also be chilled and then baked or fried. Gnocchi makes an excellent appetizer or starter or can be used as a side dish for meat or poultry.

The version for this dish I make is without eggs.
Also, instead of grating the potatoes, I prefer to mash them, with a very fine masher, so you don’t find pieces of potatoes in the dough.
A traditional way of serving gnocchi is in a tomato and basil sauce, with parmigiano and ground pepper; or even better, bake in the oven for 20-30min again with tomato and basil sauce, parmigiano and pepper, and also some mozzarella cheese (ideally smoky provola, if you can find it).
