Smoked Duck and Oyster Gumbo

Tuesday February 21, 2006
Gumbo is an African word that originally meant okra. Now gumbo refers to any kind of soup or stew with okra in it. Okra is used to thicken and flavor the dish. Gumbos come in all sorts using a variety of ingredients, typically what the cook can find in the pantry! This recipe contains oysters, andouille sausage, and smoked duck. Perfect for a Mardi Gras party or dinner with friends, this hearty dish can be served as an appetizer or, accompanied by bread, as a main course. Go to the recipe for Smoked Duck and Oyster Gumbo.
