Chile-Seared Salmon with Sweet Pear Pineapple Salsa

Monday April 24, 2006
Chiles are a wonderfully versatile ingredient in the kitchen. They make a great addition to traditional dishes of meats and soups, but can also create fantastic flavors when used with fish and fruits. This recipe from Jane Butel's Real Women Love Chiles combines fresh salmon with ground mild red chiles and red pequin quebrado. The pear and pineapple salsa adds sweetness to this dish for a perfect balance of sweet and spicy.
