Top 10 Gourmet Beef Recipes

Here is a delicious assortment of some of my favorite gourmet beef recipes that will make any carnivore happy.  An assortment of beef cuts are used here in a variety of dishes from an appetizer of beef carpaccio to a holiday prime rib.  Looking for a good place to buy beef? Check out my favorite online meat shops.

1. Seared Beef with Smoked Tomato Drizzle

Andrews McMeel

Cooked in a cast iron skillet on a hot charcoal grill, this is the Western version of beef carpaccio. The beef gets a delicious char on the outside but is still very rare on the inside. Served chilled and paper-thin on a bed of fresh baby arugula.

2. Salt and Herb-Crusted Prime Rib with Red Wine Sauce

Prime Rib is a very delicious and tender cut of meat. When considering the size of prime rib you will need, figure that each rib will feed two people. If serving 5 or 6 people, purchase a 3 rib roast. If serving 7 or 8 people, purchase a 4 rib roast. If you have a lot of guest, it's better to choose two smaller roasts rather than one large one. A smaller prime rib cooks more evenly than a big one. But, do not choose a roast smaller than 3 lbs. as this will be hard to properly cook unless you want all of it well done.

3. Oven Braised Beef Short Ribs

Braised in a very flavorful marinade of soy sauce and red wine, these beef short ribs are rich and succulent - the meat is tender, falling off the bone. Serve on a bed of polenta or rice.

4. Slaughterhouse Five Ribs

This delicious rib recipe is done in Kansas City barbecue style and comes from our friends at Oklahoma Joe's Barbecue and Catering (Kansas City, KS). Good ribs take a long time to cook at low heat to get that tender, pull off the bone experience but it's worth the wait.

5. Beef Cheek Braised with Vegetables

Clarkson Potter

This is an amazing dish to serve for the family or special guests. The braised beef is very tender and will almost melt in your mouth. The recipe calls for what seems to be a large amount of beef but the cheeks will shrink by about half during braising.

6. Beef Carpaccio with Arugula, Parmesan, and Balsamic Vinegar

This is a very simple recipe that celebrates good beef. It may be used as wonderful starter for a dinner party or as an elegant hors d’oeuvres.

7. Chipotle Chili

There are many, many versions of chili. I like the more traditional versions. This one uses ground beef as well as steak for a nice texture difference. It has a bit of kick. If you like it hotter, just add more chipotle or jalapenos.

8. Matt's Famous Austin-style Chalupas

Very simple to make, these chalupas are wonderful comfort food. Homemade refried beans are the best but canned will work fine if you're in a hurry. Once you have all the ingredients assembled, making these are quick and easy. Perfect for a party or family dinner.

9. Rigatoni with Meatballs (Rigatoni con Polpettine)

Pasta and meatballs are classic comfort food. Here is a great recipe for rigatoni pasta with meatballs that has a wonderful meaty flavor and lots of herbs. The rigatoni, which is larger than penne pasta, really stands up to the heartiness of meatballs.

10. Filet Mignon Sandwich with a Chimichurri Sauce and Goat Cheese

A very delicious take on the steak sandwich - tender grilled Filet Mignon with Chimichurri sauce (a variant of green sauce), goat cheese and roasted sweet red bell peppers on Ciabatta bread.
