Curried Coconut Wings

Here's a delicious twist on a classic comfort food. This sweet and spicy recipe for wings uses traditional Thai ingredients for wonderful flavor: green curry, lime, palm sugar and coconut.

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients:

  • 18 to 20 chicken wings (about 1 1/2 pounds), cut in half at joint, tips removed
  • 1/4 cup canola oil
  • 1/4 cup lime juice
  • 2 tablespoons soy sauce
  • 3 tablespoons green curry paste
  • 2 tablespoons palm sugar (or honey)
  • 3 tablespoons dried chili pepper flakes
  • 1 cup coconut flakes

Preparation:

In a large bowl mix together oil, lime juice, soy sauce, curry paste, sugar, chili pepper flakes and coconut.

Add wings and toss until well coated. Cover and refrigerate for at least 2 hours up til overnight.

Preheat oven to 375° F. Cover a cookie sheet with foil and spray with nonstick cooking spray. Remove wings from marinade and place onto cookie sheet in a single layer.

Bake for 30 to 35 minutes or until done. Serve hot.
