Aioli - Garlic Mayonnaise

Aioli is a wonderful garlic mayonnaise that can be used as a sandwich spread, a dip for cold deli tray, or as a sauce for pasta and other dishes.

Prep Time: 15 minutes

Ingredients:

  • 2 Large Egg Yolks
  • 5 Cloves Garlic, finely chopped
  • 1 1/2 Cups Extra-Virgin Olive Oil or Canola (or a combination)
  • 1 Tablespoon Lemon Juice
  • Salt and Pepper, to taste

Preparation:

In a large bowl, whisk together the egg yolks and garlic. (You can also do this in a food processor, if you prefer.)

Slowly add the oil, a few drops at a time, until the mixture begins to thicken. Now add the remaining oil in a thin drizzle.

After all of the oil has been incorporated, add the lemon juice, salt, and pepper.
