Molten Lemon Cake with Simmered Summer Blueberries
Here is a wonderful summer dessert based on the classic chocolate molten cake. Lemons and blueberries make a great combination. Adapted from a recipe from the restaurant Proof on Main in Louisville, Kentucky.
Lemon Mascarpone Layer Cake
Lemons are especially nice in cakes. Here is a wonderful dessert that is part cake, part trifle. The layers are soaked with lemon syrup with delicious lemon and mascarpone cream in between. Meyer lemons add a distinct flavor, but regular lemons will work just fine.

Meyer lemons are beautiful fruit. Originating in China, Meyer lemons are thought to be a cross between lemons and Mandarin oranges. They are slightly sweeter than regular lemons. They work great in this delicious pound cake.
