White Chocolate Pear

Simple yet beautiful. Fresh pears match perfectly with chocolate. White chocolate really lets the flavor and sweetness of the pear stand out. Add a little shaved dark chocolate for a stunning visual presentation.

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: 6 Servings

Ingredients:

  • 6 fresh Bartlett pears, slightly under-ripe, peeled, cored, and stems intact
  • 3 cups water
  • 2/3 cup sugar
  • 1 tbsp lemon juice
  • 1- 1/2 tbsp cornstarch
  • 3 cups milk
  • 3 egg yolks
  • 1-1/8 cups grated white chocolate
  • 1 tsp vanilla extract
  • 1/4 cup melted dark chocolate, optional
  • Grated dark chocolate, optional

Preparation:

To poach pears: combine 3 cups water, 1/3 cup sugar and lemon juice in a large pot; heat until sugar is dissolved. Add pears, simmer until tender. Remove from heat but leave pears immersed in syrup; chill well.

To prepare white chocolate sauce: mix 1/3 cup sugar and cornstarch in heavy saucepan. Slowly stir in milk until smooth. Stir constantly over medium heat, until mixture boils and thickens. Remove from heat. Beat egg yolks in a small bowl; add a small amount of hot sugar-milk mixture to eggs; then add egg mixture to sugar-milk mixture pan, stir vigorously. Over LOW heat, stir constantly until mixture thickens and coats spoon. Remove from heat. Stir in grated chocolate and vanilla; return to heat and stir until mixture is smooth.

To serve: remove pears from liquid with slotted spoon. Drain well. On individual dessert plates, place a pear on each plate. Spoon white chocolate sauce over each pear. For garnish, use melted dark chocolate to form swirls in the white chocolate sauce and sprinkle grated chocolate on stem-end of each pear, if desired.
