Cherry Apricot Clafouti

Enjoy the fruits of summer with a twist on an old classic. Clafouti is a cakelike fruit dessert in the French tradition, here using a delicious combination of cherries and apricots.

Prep Time: 1 hours, 20 minutes

Cook Time: 45 minutes

Ingredients:

  • 1 Pound Cherries, pitted
  • 1/2 Pound Apricots, pit removed and sliced 1/4" thick
  • 1/4 Cup Grand Marnier
  • 1/2 Cup Sugar
  • 3 Eggs
  • 1 1/4 Cups Milk
  • 1 Vanilla Bean, spit in half lengthwise
  • 1 Cup Flour, sifted
  • 1/8 Teaspoon Salt
  • 1 Tablespoon Butter
  • 2 Tablespoons Butter, melted

Preparation:

In a large bowl, combine the cherries with the sugar and Grand Marnier. Let stand for one hour.

Preheat the oven to 350 degrees. With the butter, grease an oven proof dish about 10 inches in diameter and 2 inches deep.

Toss the sliced apricots with the cherry mixture. Pour the fruit into the buttered baking dish. In another large bowl, whisk together the eggs, milk, melted butter, salt, and flour. Scrape the seeds of the vanilla bean into the mixture and combine until smooth. Pour this over the fruit.

Bake in the oven, until the clafouti puffs up and becomes spongy, about 40 to 45 minutes.

Serve warm with vanilla ice cream or whipped cream.
