Fudgy Brownies

By Brett Moore, About.com

Delicious and moist, these brownies are definitely for chocolate lovers. Dense and rich, these brownies are more similar to fudge than cake.

Prep Time: 20 minutes

Cook Time: 45 minutes

Ingredients:

  • 1 1/2 pounds semisweet or bittersweet chocolate, chopped (or chips)
  • 1 cup (2 sticks) unsalted butter, cut into pieces
  • 6 large eggs
  • 2 cups granulated white sugar
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder

Preparation:

Preheat oven to 325 degrees F and place rack in center of oven.

Butter (or spray with a nonstick cooking spray) a 9 x 13 inch pan.

Melt the chocolate and butter in a double boiler or stainless steel bowl over a pot of simmering water. While thats melting, whisk together the eggs and sugar until a pale yellow. Fold in the melted chocolate mixture and vanilla extract.

Whisk together the flour, baking powder, and salt and then fold into the chocolate and sugar mixture until well combined. Pour into the prepared pan and bake for about 45 - 55 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and let cool on a wire rack. Serve at room temperature or chilled. Store leftovers tightly wrapped in the refrigerator.

These are even better the second day. You can also freeze the brownies.
