Grand Cookie Crumble
Both a drink and a dessert, "drinkable desserts" combine fancy cocktails with luxurious desserts in one of the hottest food trends.

Restaurants on the cutting edge of this latest dessert trend include The Modern in New York City, Boa Steakhouse in Las Vegas, The Butcher Shop in San Diego, and several others.

This recipe was created by Pastry Chef Nicolas Boussin for Grand Marnier.

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients:

  • **** For the Grand Marnier Cocktail ****
  • 3 oz. Grand Marnier
  • 1 oz orange juice
  • 1 oz lemon juice
  • ice
  • **** For the Chantilly Cream ****
  • 1/2 cup whipping cream, whipped
  • 1 tbsp sugar
  • 2 tsp Grand Marnier
  • **** For the Chocolate Cream ****
  • 3-1/2 oz dark chocolate
  • Zest of 1/2 orange, finely grated
  • 1/2 cup cream
  • 2/3 cup whipping cream, whipped
  • 2 tsp Grand Marnier
  • *******
  • 6 Chocolate Chip Cookies

Preparation:

Serves six.

Step 1: Grand Marnier Cocktail:

In a shaker filled with ice, combine 3 oz. Grand Marnier, 1 oz orange juice, 1 oz lemon juice. Shake.

Step 2: Chantilly Cream:

Combine whipped cream with sugar. Fold in Grand Marnier.

Step 3: Chocolate Cream:

Bring the cream to a boil and pour over the chocolate. Add the Grand Marnier and the zest. Fold into the whipped cream and assemble immediately.

Assembly:

Pour the cocktail into a martini glass. Place immediately in the freezer and when it begins to harden, stick in the straw.

Leave in the freezer for about 3 hours. Pour the chocolate cream over the top. Decorate with pieces of chocolate chip cookie and chantilly cream. Serve chilled.

Chef's Suggestions for the Grand Cookie Crumble:

Freezing the cocktail allows preparers to assemble the dessert over top while maintaining a separation between the layers. Keep in the refrigerator after assembling. The cocktail will thaw, allowing both the dessert (with a spoon) and the cocktail (with the straw) to be enjoyed. A fun surprise for guests.

This was a hit with everyone at a Supper Club dinner. I did increase the cocktail recipe so that there was a 3-4 ounce serving as a base. I also added a bit of vodka so it wasn't so cloyingly sweet. This additional volume meant it needed to be in the freezer longer. You should realize that with private residential freezers it is not possible to have the liquor freeze--it just gets slushy. I followed the rules about assembling after making the chocolate cream, but felt it didn't layer as well as I would have liked. (I would suggest after making the chocolate cream layer that it be cooled in the refrigerator about 30 minutes before placing on top of the ""frozen"" cocktail.) I brought it to our event at this point,transporting the glasses in a 9 x 13 pan with icecubes surrounding the glasses then kept it in the refrigerator all through dinner. Right before serving I added the cookie crumbles and the Chantilly cream. I used bittersweet chocolate pieces in my cookies--actually made oatmeal choc chip cookies with walnuts, which I felt went great with the sweetness of the cocktail underneath.
