Raspberry Champagne Sorbet

Sorbets are very simple to make. In this recipe, we've replaced the water with champagne which complements the raspberries very nicely.

Prep Time: 20 minutes

Ingredients:

  • 1 qt. fresh raspberries
  • zest of one lime
  • 1 cup champagne
  • 1 cup simple syrup*

Preparation:

Makes approximately 3 quarts.

Puree all ingredients in a blender or food processor. Strain and chill for 1 hour.

Pour into ice cream batch freezer and churn until the sorbet reaches the desired consistency.

*Simple Syrup: 1 cup sugar, 1 cup water. Combine sugar and water in a small pot. Bring to a boil. Remove from heat. Stir and make sure all the sugar has dissolved. Refrigerate until needed. Makes 2 cups.
