Ingredients:
- 1 2 1/2- to 3-pound watermelon, seeds and skin removed, cut into 1-inch cubes
- 1/2 cup honey
- 1/4 cup fresh lime juice
- 2 tablespoons of finely chopped mint
- 1/8 teaspoon salt
Preparation:
Makes 1 quart.
Place all ingredients in a blender or food processor and puree for 2 minutes.
Chill mixture in fridge for at least two hours.
Freeze mixture in an ice cream maker according to manufacturer's directions.
