Garlicky Chicken Kebabs

Here is a delicious chicken recipe perfect for summer grilling. And if the weather isn't so great, it also works great under a broiler. Lots of Middle Eastern flavor with roasted garlic, coriander, and cumin. Works great for an appetizer or as an entrée with some flatbread and a salad.

Prep Time: 2 hours,

Cook Time: 7 hours,

Ingredients:

  • 2 pounds chicken breast, skin removed and cut into 1-inch cubes
  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 6 cloves garlic, chopped fine
  • 1/2 teaspoon coriander seeds, crushed
  • 1/2 teaspoon cumin seeds
  • 2 tablespoons yogurt
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 tablespoons garlic paste (recipe below)

In a bowl, mix together the olive oil, lemon juice, raw garlic, coriander, cumin, yogurt, salt, and pepper. Add the chicken, cover, and refrigerate for 2 to 8 hours.

Prepare a grill or broiler. Put the marinated chicken onto skewers. Grill or broil until the chicken is completely cooked, 7 to 10 minutes. Turn the skewers once or twice during cooking. Brush the chicken with the garlic paste about a minute before you take them off the grill.

Serve with rice and/or flatbread.
