Ingredients:
- 2 pounds chicken breast, skin removed and cut into 1-inch cubes
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 6 cloves garlic, chopped fine
- 1/2 teaspoon coriander seeds, crushed
- 1/2 teaspoon cumin seeds
- 2 tablespoons yogurt
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 tablespoons garlic paste (recipe below)
Preparation:
Go here for Garlic Paste Recipe.In a bowl, mix together the olive oil, lemon juice, raw garlic, coriander, cumin, yogurt, salt, and pepper. Add the chicken, cover, and refrigerate for 2 to 8 hours.
Prepare a grill or broiler. Put the marinated chicken onto skewers. Grill or broil until the chicken is completely cooked, 7 to 10 minutes. Turn the skewers once or twice during cooking. Brush the chicken with the garlic paste about a minute before you take them off the grill.
Serve with rice and/or flatbread.
