Shrimp with Nectarine and Chili Sauce

Here's an easy way to prepare shrimp that is popping with flavor. Sweet juicy nectarines and spicy serrano chilis make a wonderful combination that pairs very well with shrimp.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 pounds shrimp (medium)
  • 3 nectarines, chopped
  • 1/2 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 4 tablespoons butter
  • 1 cup dry white wine
  • 1/3 cup honey
  • 4 or 5 Serrano chilies, chopped fine
  • handful of parsley, chopped
  • sea salt to taste

Preparation:

Peel and wash shrimp very well. Melt 2 tablespoons butter, add onion and garlic until tender. Add nectarines and honey, then stir in chopped chilies. Cook over low heat and season with salt. Set aside. Heat remaining butter, stir in shrimp and saute until shrimp are pink and firm. Stir in the wine and parsley. Serve shrimp with nectarine sauce.

Serve as is with some nice bread or over rice or noodles.
