It's always a treat when a book is published giving an inside look at a famous restaurant. The Waldorf=Astoria Cookbook is especially a pleasure to read because of the rich history of the Waldorf=Astoria, perhaps America's most famous hotel. It's also a great book because of its author, Waldorf=Astoria Executive Chef John Doherty.
Chef Doherty has been with the hotel for 20 years, heading a team of 7 Chefs de Cuisine, 10 Sous-Chefs, and 110 cooks. More than 120 recipes from the hotel's restaurants (including Peacock Alley and Bull & Bear) are given. Chef Doherty presents the recipes in a simple and straight forward method. Interesting sidebars about the personnel and history of the hotel add to this wonderful book.
